It presents charts relating consumer exposure to the USDA "Safe Handling Instructions" label on raw meat and poultry products to food safety perceptions and practices. It includes the relationship between seeing the label and: safe food preparation practices; knowledge of food safety incidents; and perceived risk of unsafe practices. Finally there is data on the effectiveness of the label as measured by changed consumer behavior and improved consumer education of food safety issues. It includes the prevalence of consumer awareness of the label, the relationship between label awareness and handling practices, the relationship between label awareness and perceived risks of unsafe practices, and a discussion of factors associated with awareness.
