	Kasuga, Fumiko	Archiving of Food Samples From Restaurants and Caterers This presentation was given at the 1st International Conference on Microbiological Risk Assessment: Foodborne Hazards. It provides an example of data collection for hazard characterization, including data sources for dose-response analysis. It also discusses analysis of outbreak data from Japan, including how policy requiring large scale cooking facilities to save samples of raw food materials and cooked dishes has helped in the collection of outbreak data, ways that data from many varied sources are combined, and more.
